Gjellë me Arra means dish with nuts and is traditionally made in Albania with either chicken or veal and walnuts.
2 tablespoons flour, 15 finely crushed walnuts, 2 egg yolks beaten, 1 garlic clove minced, 1/4 lb butter, 2-3 lbs veal cubed
Cook veal over medium heat in a saucepan. Remove and set aside the meat, leaving the remaining juices in the saucepan. In another saucepan, add the flour and stir until light brown, then add half stick of butter. Add the walnuts, garlic and 2 egg yolks stirring constantly. Add juices from the other saucepan and mix until thickened. Immediately remove from heat to avoid solidifying the yolks. Then fold in meat. Pan fry the remaining butter and pour over veal. Serve and enjoy.
Review: We found the dish rich enough without pouring the melted butter on top at the end. Our meat didn’t produce a lot of juices so we just added a bit of water instead. Overall, good dish and we enjoyed the meat and nut combination. We still haven’t found our favourite yet but we are going to keep experimenting.
